Development of Dendrobium officinale pulpy drink

چکیده
D. officinale is a renowned botanical species in China with rich historical background associated its extensive use traditional medicine. This research aims to develop pulpy drink using the Stem of plant and enhance thermal stability. In order stability beverage, multiple amounts xanthan gum were used formulation. The physical was assessed by measuring particle size, Zeta potential, sedimentation, viscosity, color. current findings indicated that beverage composition 3% pulp 0.4% exhibited highest level smallest negative zeta no sedimentation.
